Oysters Rockefeller

Are you ready to experience oysters like never before? We made this recipe big enough for a dozen delectable oysters because no one will be happy with just one! The flavour-packed mix of Canadian oysters, cheese, seasonings and bread crumb topping is equally at home at a sophisticated soiree as it is with the gang watching the game on TV.

Ingredients

  • 12 oysters, shucked
  • 2 tbsp (28 g) butter
  • ½ cup (60 g) onion, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp (15 ml) lemon juice
  • ½ cup (40 g) Monterey jack cheese, shredded
  • ½ cup (15 g) packed spinach, chopped
  • 1 tsp (4 g) parsley, finely chopped
  • For the topping:
  • ¼ cup (15 g) bread crumbs
  • 1 tbsp (15 g) butter, melted
  • Lemon wedges for serving

Steps

To Prepare

  1. Preheat oven to 350°F (177°C).

  2. Place shucked oysters on a parchment-lined baking sheet; set aside.

  3. In a small frying pan, melt butter over medium-low heat. Add onion and garlic, and sauté until translucent; about 5–6 minutes.

  4. Add lemon juice; let it evaporate for 1 minute. Mix in cheese and spinach and remove from heat. Stir in the parsley.

To Assemble

  1. Spoon mixture on top of oysters. Combine breadcrumbs with butter and sprinkle onto each oyster.

  2. Bake at 350°F (177°C) for 10–12 minutes or until the tops are golden.

  3. Serve with lemon wedges.
