“Seasar” Caesar Shots with Seared Scallops

Raise a toast to good times with great people, and then it’s “down the hatch”! Part shooter and part appetizer, these mini-cocktails are quick & easy to make. The buttery texture of the scallops and the mix of briny and umami flavours from searing is the ultimate pairing with a classic Canadian Caesar.

Ingredients

  • 20 frozen Canadian jumbo scallops (450 g), thawed and patted dry
  • 1L Clam tomato cocktail or Caesar mix, or ready-to-drink Caesars
  • 6 oz. unflavoured vodka (preferably Canadian)
  • Worcestershire sauce
  • Hot sauce (optional)
  • 1 cucumber
  • Caesar rimmer or celery salt

Steps

  1. Pour clam tomato cocktail, Caesar mix, or ready-to-drink Caesars into a pitcher.

  2. (Skip this step if using ready-to-drink Caesars that contain alcohol.) Stir in vodka. Add Worcestershire sauce and hot sauce (if desired) to taste. Place in refrigerator to chill.

  3. Use a peeler to slice ribbons of cucumber.

  4. Sear Canadian scallops on a grill or in a pan on a stovetop; about 2 minutes per side.

  5. Wet the rims of shot glasses and rim with Caesar rimmer or celery salt.

  6. Fill each shot glass with Caesar.

  7. With toothpicks or cocktail spears, create skewers with one seared scallop and a ribbon of cucumber folded back on itself repeatedly. Place skewers into shot glasses.

Chef's Tips

  • Canned or steamed Canadian mussels can be used in place of scallops.
  • Omit vodka for alcohol-free shots.
  • If you have a shrimp ring, for a simple garnish, hook a single shrimp on the glass in place of the skewer.
